The easiest way to eat about 500 calories a day is to eat just non-starchy vegetables, which is any vegetable you want, except peas, potatoes or corn. Non-starchy vegetables usually contain 25-50 calories per cup, so you can eat a ton vegetables and still stay around 500 calories. Season your vegetables with Bragg’s, soy sauce, lemon juice, vinegar, butter-flavored popcorn spray, mustard and dry seasonings.
