Low carb maintenance works if you avoid or take it easy on the low carb calorie nightmares – nuts, cheese and beef. Ideally, you want to have the experience of eating as much as you want. You can probably freely feed eating mostly fish (20-30 calories an ounce) and veggies. But if you start freely feeding on fatty beef, you’re in 80 calories an ounce territory. Never forget that a 3 ounce bag of nuts from the gas station has 450-500 calories and 7-10 grams of carbs, and was possibly cooked in rancid oil. If you are going to eat nuts, eat them raw, and try to find 3 ounce bags.
